Party Potato Salad

For this recipe she has this to say: "This recipe requires a little more prep, but it is definitely worth the time and effort. I have taken this to numerous occasions and after consuming large quantities of this yummy potato salad; the requests com in for the recipe. This is the first time I have ever taken the time to do measurements; I prefer to make things up as I go along. Feel free to add or remove anything that you don't like...that is what makes it yours."

Not only does it taste amazing, it is colorful!

Ingredients

  • 7 lbs. potatoes (10-12 nice sized Idaho), peeled and cut into 3/4 inch chunks
  • 3 cups Hellmann's® Mayonnaise
  • 2 tablespoons dijon mustard
  • 1 5.75 oz jar pimento stuffed green olives, drained and chopped
  • 1 tablespoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon cayenne pepper
  • 2 cups chopped celery
  • 1 cup chopped green onions, use the white part and just a little of the green (2 stalks)
  • 6 hard-cooked eggs, grated
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • paprika to garnish

Instructions

  1. Cover potatoes with water in 8-quart saucepot; bring to a boil over medium-high heat. Reduce heat to low and simmer until potatoes are fork tender, about 10 minutes. Drain and cool slightly.
  2. Combine mayonnaise, dijon mustard, cayenne pepper, salt, black pepper, olives, celery, onions, eggs, parsley and dill in a large bowl and mix. Add potatoes and toss gently.
  3. Refrigerate a few hours or overnight.
  4. After refrigeration stir the salad again, you may need to add more mayonnaise if too dry.
  5. Serve chilled or at room temperature. Sprinkle the top with paprika before serving.

Notes

*Allowing the potato salad flavors to meld is important here, so it is better to make the day ahead or early in the morning for an event late in the day. *Disclaimer: The ingredients pictured above are those recommended by Susan.
