Moros aka Rice and Black Beans

You can find hundreds of recipes for rice and black beans, however, this one is extra special because it is a-la-my dad, Roselo. Most of the time he makes this and other dishes on the fly, no recipe, so please note that the amount of each ingredient especially the salt is to taste.

Ingredients

  • 4 to 6 tablespoons olive oil
  • 2 large garlic cloves, minced
  • 6 bacon slices, chopped about a 1/2"
  • 1 large chorizo, chopped or sliced about an 1/8" to a 1/4" thick
  • 1 large onion, finely chopped
  • 1/2 large pimiento from jar (these come roasted and jarred)
  • 1/2 large green bell pepper
  • 1 bay leaf
  • large pinch of thyme
  • large pinch of cumin
  • 1 chicken boullion
  • 2 teaspoons salt
  • 1/2 cup tomato sauce
  • 1 can (15 oz) black beans, drained (my favorite are El Ebro brand)
  • 2 cups white rice

Instructions

  1. Preheat oven to 350F.
  2. Heat oil in a dutch oven to medium heat
  3. Saute garlic making sure not to burn it. Remove and set aside.
  4. Cook bacon until crispy. Remove and set aside.
  5. Saute onions, chorizo, peppers, tomato sauce, salt, chicken boullion, thyme and cumin about 8 to 10 minutes.
  6. Add the drained beans and continue to cook another 2 to 3 minutes.
  7. Add back the garlic and bacon, stir.
  8. Stir in 3 cups of water and bring to a boil.
  9. Stir in the uncooked rice and let the liquid reduce a bit, about 7 minutes (or as my dad says, until little volcanoes begin to form). Make sure it's not completely dried up.
  10. Add the bay leaf.
  11. Cover and bake at 350F for 20 minutes.
  12. DO NOT UNCOVER, set aside and let it rest for 3 minutes.
  13. Uncover and pour a little bit of olive oil, stir, cover and let stand 5 minutes.
  14. Serve and enjoy!
