First a little background...I was born in the USA to Cuban parents. You know the kitchen is numero uno within our culture. To start this cooking adventure I'm posting the recipe for Mata Hambre. Translation: "Hunger Killer". It's basic yet a staple recipe for Cubans. This one in particular is my dad's version. Simple and oh so good!!
Ingredients
- 2 cups Jiffy All Purpose Mix*
- 1 stick of butter, plus more to butter dish
- 2 eggs
- 1 cup sugar
- 1 bar guava paste (use the whole bar or as much as you like)
Instructions
- Preheat oven to 325 F.
- Butter an 8x8 glass baking dish and set aside.
- Mix all ingredients in a bowl, except the guava paste, until a paste like dough is formed.
- Divide the dough in half.
- Use the first half to layer the bottom of the baking dish.
- Next, layer the guava by slicing it and spreading throughout, covering the dough layer.
- Lastly, spread the remaining dough over the guava layer.
- Bake for 45 minutes or until golden brown.
- Dig in!
